We add the cinnamon after roasting our smooth medium-roast Arabica, so the spice tastes warm, not dusty. It's great black and even better with a little brown sugar and cream, and the decaf makes an easy evening treat. Choose standard, dark or decaf roast, whole bean or ground.

Drip or batch brewer: about 2 tablespoons (10 g) of medium-ground coffee per 6 oz of water, or 1 lb per 2.5 gallons in a commercial brewer.
Pour-over: medium-fine grind, 1 part coffee to 16 parts water, water just off the boil.
French press: coarse grind, steep 4 minutes, then press.
Store whole bean in a cool, dark, airtight container and grind just before brewing.
