The result is smooth, strong and heavy-bodied, with oatmeal, molasses, chocolate and a peanut-butter-cookie finish. Brew it at home before a long shift, or put it on at hospitals, warehouses, garages, delis and any 24-hour counter where the coffee has to work as hard as the people drinking it.

Drip or batch brewer: about 2 tablespoons (10 g) of medium-ground coffee per 6 oz of water, or 1 lb per 2.5 gallons in a commercial brewer.
Pour-over: medium-fine grind, 1 part coffee to 16 parts water, water just off the boil.
French press: coarse grind, steep 4 minutes, then press.
Store whole bean in a cool, dark, airtight container and grind just before brewing.
